The perfectly balanced ratio of soybeans and koji (10 to 9) brings out the rich taste of umami with a sweet aroma. Also, we didn’t add any alcohol which is normally mixed in to slow down the further fermenting. Without the alcohol, the miso will continue to ferment which means it is “alive and fresh”, so we have packed the miso in a package with a valve to let it breathe. The miso tastes just like homemade, traditional miso we used to enjoy in the good old days. Everyone is sure to love this basic miso, which you can also taste the time and effort it has gone through. It goes we with multiple dishes. Our recommendation is yaki onigiri!
